Ingredients

• 4 cups of water
• 1 cup sweet potato puree
• 2 eggs (lightly beaten)
• 1 teaspoon vanilla powder
• 1/2 cup peanut butter
• 2-3 cups whole wheat flour
• 2 cups rice flour
• 1 cup rolled oats
• 2 tsp baking powder
• For the topping: Greek yogurt and cream cheese (half and half)

Preparation

• Preheat the oven to 175° C.
• Mix the water, sweet potato puree, eggs, vanilla powder and peanut butter in a bowl.
• Mix the rice flour, wholemeal flour, rolled oats, baking powder and cinnamon in a separate bowl.
• Mix the contents of both bowls in one bowl.
• Lightly grease the cake tin.
• Pour the batter into the cake tin and cupcake cases.
• Bake in the preheated oven for 30-40 minutes.
• Leave to cool well.
• For the topping, mix the Greek yogurt and cream cheese in equal parts.
• Spread the mixture over the cake and cupcakes.
