  • 950 g cherries
  • 100 ml water
  • 120 g sugar (or less or a natural sweetener)

Preparation

  1. Wash the cherries and remove the stalks and pits. You can also use pitted cherries from a jar, but fresh ones taste better.
  2. Place the cherries, water and sugar in a large pan and bring the mixture to the boil.
  3. Allow the compote to simmer over a medium heat for about 15 minutes, stirring occasionally, until it thickens.
  4. Remove the pan from the heat and allow the compote to cool slightly.
  5. Pour the compote into clean jars or bowls and store in the fridge.
