What is water spinach?
Water spinach (Ipomoea aquatica) is a plant from the bindweed family, which also includes the sweet potato. It grows as a marsh or water plant with hollow stems and alternate leaves. Depending on the variety, the leaves are ovate or lanceolate and between 5 and 15 centimetres long. The flowers are white or pink and funnel-shaped.
Water spinach is mainly cultivated and harvested in the tropics and subtropics. It is eaten raw or cooked and has a mild flavor. It contains many vitamins, minerals and fiber.
