Valençay

Valençay is a French cheese from the Berry region, made from goat's milk. It has a characteristic pyramid shape with a flattened tip and a blue-grey mold rind dusted with charcoal powder. It tastes fresh and lemony when it is young and nutty when it matures. It has had AOC certification since 1998, which means that it can only be produced under certain conditions.
